The Demarle Flexipan Origine XXL Yule Log Insert Mold is a professional 5-cavity flexible mold designed for creating long, consistent inserts for bûches, Yule logs, entremets and layered desserts. The full mold measures 520 x 410 mm (approx. 20.5 x 16.1 in) and features 5 elongated cavities, each measuring 495 x 40 mm (approx. 19.5 x 1.6 in) x 39 mm (approx. 1.5 in) deep. The long, narrow format is ideal for preparing mousse, crémeux, fruit, gelée and other insert components that can be incorporated into larger log-shaped desserts. Flexipan Origine's flexible silicone-fiberglass construction assists with clean unmolding of delicate frozen or prepared inserts while helping maintain their defined shape.
