Cream of Tartar (Potassium Bitartrate) from Louis François is a natural, plant-based acid derived from winemaking. In professional kitchens, it serves two key purposes: as an acidity regulator and as a sugar inversion booster. When added during the cooking of sugar syrups, it converts sucrose into invert sugar, preventing crystallisation and giving confectionery — such as fondant, caramel, and pulled sugar — a smoother, more elastic texture. It's also used to stabilise egg whites in meringue-making, giving a more stable foam. Prepare as a 50% solution in water and add until desired pH. Kosher and Halal certified. Made in France.
