Citric Acid Powder from Louis François is the professional kitchen's most versatile acid — used to sharpen flavours, lower pH, improve preservation, and help pectins set at the right moment. In confectionery and patisserie, it's added at the end of cooking to trigger pectin gelling in fruit jellies and candies. In coulis and fruit preparations, it helps maintain the bright, natural colour of your fruits and extends shelf life by creating a preserving acidic environment. Simply dissolve in an equal weight of water (50% solution) and add until you reach your desired pH. Dose to effect. Kosher and Halal certified. Made in France.
