This fine powdered gelatine is Kosher and Halal certified, making it suitable for the broadest range of dietary requirements. At 200 Bloom strength, it produces a soft, elastic, transparent gel that melts luxuriously in the mouth at around 37°C — just like the best patisserie. Use it in panna cotta, mousses, bavarois, gummies, and aspics. It doesn't recover structure after blending, so incorporate it gently. Odourless and tasteless. Dose at 10–20 g/kg. Made in France.
