Extracted from red algae, it forms a firm, brittle gel that sets quickly and holds its shape at room temperature. Unlike gelatine, it's 100% vegan and suitable for all dietary requirements. It's heat-reversible at 90–95°C, meaning you can remelt and reset it, though it won't recover its structure after blending. Perfect for confectionery, aspics, patisserie, and catering.
