I’m very happy with this mold. The polycarbonate is sturdy and substantial, and my tempered chocolate releases cleanly with a beautiful glossy finish. The bars have nice sharp definition and a great professional appearance. I especially like the depth of the cavities, which gives the finished bars a substantial feel and a wonderful snap. I’ve used mine with nuts added to the chocolate and have had excellent results. The three-cavity size is also very convenient for making several bars at once. This is a definite step up from inexpensive plastic or silicone molds, and I would absolutely purchase another Martellato mold.
