Tracy grew up in a family where baking was not a hobby or a pastime. It was a language. At the heart of it all was Tracy's mother. She was the one who brought the family close to baking. Her mother watched baking shows with a quiet dedication, tried recipe after recipe, and kept every success, every tip, every little triumph recorded in her own words in a small green book. Her classics, her tea cakes, her experiments, all noted down in her own hand. That little green book held more than recipes. It held a whole way of living.
She made sure all three of her children grew up using the oven, not just watching it. Even her husband, for all his years in the industry, had his own passion for cooking at home. He loved bread. Different styles, different methods, always curious, always trying something new.
Every little occasion in the family was marked with a cake, baked from scratch, together. Baking was never just something they did. It was how they celebrated, how they connected, and how they showed up for each other. For Tracy, it is one of the fondest memories of her childhood and a feeling she carries with her to this day.
Her father, Jose Elevathingal, spent over 45 years building his expertise in the food industry. In 2009, he followed his true calling and founded Greens International in Sharjah, UAE. What began as a bold leap of faith grew into a trusted name for bakers, pastry chefs, chocolatiers, and food businesses across the region. He took the risks, built the business from the ground up, and did it with his family standing beside him every step of the way.
The Mind Behind Greens Choice
Tracy brings together an engineering background and business education, giving her a practical, structured perspective on building the brand with care and intention.
Her real education came from being deeply involved in the family business. She worked on launching online platforms, managed digital and social media marketing teams, and helped evolve a decade-old traditional business into a modern, digitally driven one. She understands e-commerce, operations, and brand building — not from a textbook, but from the ground up, the same way her father built everything he has. The perfectionist streak? That runs in the family too.
When Tracy and her husband moved to the United States, she found herself at a crossroads. She was a new mom, adjusting to a completely new environment, thinking about what she wanted to build next. She kept noticing the same thing everywhere she looked.
Access to high-quality, professional-grade baking supplies in the US was not as easy as it should be. Serious home bakers, small businesses, and passionate chocolatiers were working around gaps that simply should not exist. Tracy knew exactly what was missing. She also knew exactly how to fix it.
That is where Greens Choice was born.
Built From Scratch in Erie, Pennsylvania
In 2023, right here in Erie, Pennsylvania, Tracy built Greens Choice from scratch. Her husband, who never once questioned the dream, chose to walk with her as she set off on her new path — turning the page and writing the next chapter of the family business. Her daughter, Sarah, and son, Joe, are her biggest cheerleaders. Her parents and siblings, cheering them all on from across the ocean, remind her every single day why this matters.
